Because TreLEAFia™ contains zero calories, you may be able to add other ingredients in recipes you possibly refrained from adding, such as nuts, fruits and egg yolks. Calorie savings become much easier once sugar calories are off the table. TreLEAFia™ works best in recipes where the main role of sugar is to provide a sweet taste.
How it works
Most products designed to replace sugar offer a 1-to-1 replacement by volume, while simple to use, they feature undesirable and unnecessary components such as cheap fillers, flavors, sugar alcohols and artificial ingredients that we wanted to avoid.
TreLEAFia is an all natural sugar replacer comprised of trehalose, stevia leaf extract and monk fruit extract. It is a great sugar substitute for beverages, cooking and baking to provide a sweet flavor with less sugar, less carbohydrates and less calories than traditional recipes. TreLEAFia is a low glycemic, hypoallergenic, non-GMO, and a vegan/vegetarian friendly sweetener.
Trehalose is a naturally occurring disaccharide produced from tapioca, potato starch and/or sweet potato starch. Trehalose is a multi-functional sugar that stabilizes proteins and improves taste, texture and appeal of food and beverages. It offers about 50% the sweetness of sugar, but more importantlyhelps with even dispersion, ease of use and no clumping in liquids.
Stevia Leaf extract is gently created using only water and filtered for the active steviol glycosides. It is then enzymatically treated to remove the bitter aftertaste. As one of the major actives , it as has 120 times sweetness of regular table sugar.
Monk Fruit extract (Lo Han Guo) is derived from a tropical vine, the tender melon is crushed and uses simple extraction to release its natural sweetness of the active mogrosides. As one of the major actives ,it has 250 times sweetness of regular table sugar.
Sugar reacts quite specifically in recipes besides just adding sweetness, it creates browning, adds volume and moisture. TreLEAFia™ is a concentrated sugar alternative, and lacks some of the other aesthetics that sugar provides, using it in some cases requires slight compensations in order to provide you with the best results in cooking and baking. For example, TreLEAFia™ works well in high water content recipes where sugar is not adding moisture, but simply sweetness such as: beverages, custards, compotes, pie filling, cobblers, sweet sauces, sweet glazes, salad dressings, and shakes. In recipes where sugar provides more aesthetics, such as moisture content and browning, such as breads, muffins, cookie, and cakes you may need to make a few adjustments such as the addition of more liquid componenets such as water or milk to compensate for the moisture sugar contributes to these baked goods.
